Here’s another episode in my ‘experimental cooking’ series! I never meant for this to become a series of posts but it seems to have just happened!
I’ve been trying to find some healthier, sweet snacks. After a cheeky google I discovered it’s possible to make cookies that consist of just 2 ingredients – oats and banana. I fancied something a little bit more exciting than that, so I added in some dark chocolate chips and a few dried cranberries. It would also be possible to add chopped nuts, raisins or similar (but don’t go overboard)!
Here’s the result:
Place the oats in a bowl and add the banana, then mash the banana into the oats with a fork. After a while I ended up diving my hands into the mixture and kneading it all together.
Once the oats and banana were blended together, I added the choc chips and cranberries, then gave it another knead.
Split the mixture into cookie sized pieces (I made 8) and place on a baking tray.
Bake on a moderate heat 180 degrees/350F for about 20 minutes.
The verdict – these taste delicious straight out of the oven. I’ll be interested to see how long they keep (except I think they will soon be gone as they are scrummy)!
